THE BEST LEMON CURD EVER !!!!!!!

Aujourd'hui je vous propose LA recette, celle qu'un jour vous trouvez et que vous faites, refaites, encore et encore !!!
Je l'ai trouvé dans ce livre que mon fils m'a offert pour mon anniversaire " Make it Paleo 2".

I found it in a book that my son gave me for my birthday, "Make it Paleo 2 ".






C'est un très beau bouquin, avec des recettes très intéressantes.

Quand j'y ai vu cette recette de Lemon curd, j'ai tout de suite su que c'était la bonne !!
Bon, je sais, elle n'est pas légère, et elle peut sembler compliquée ( ce qui n'est pas le cas), mais franchement si vous la faites une fois, je vous assure que vous la referez des centaines de fois !!!

J'ai fait ce curd avec des citrons Meyer.
Je ne les connaissais pas avant d'arriver ici.  Ils sont moins acides que les citrons classiques, plus sucrés.
C'est vraiment une saveur intéressante. Et je trouve que pour le curd, ou la tarte au citron, c'est délicieux, surtout si comme moi vous n'aimez pas trop l'acidité.

And when I saw this Lemon curd recipe, I knew,  at once, that it would be THE one !!!!!

Well, I know, it's not light, it may seem a little bit difficult, (but be sure that it's not)....but you know what, if you do it one time, you will do it hundred times !!!!

I made this curd with the Meyer lemons. 
I did't know this kind of lemons before I came here. It's a lemon with less acidity, more sweetness. It's a very interesting flavor.
And for the curd and the lemon pie, if like me you don't like the acidity too much, it's delicious !




Ingredients : 

     - 7 jaunes d'oeufs
     - 200 g de sucre
     - 12 cl de jus de citron
     - le zeste d'un citron (bio)
     - 110 g de beurre
     - 1 pincée de sel


      - 7 egg yolks
      - 1 cup brown sugar ( in the initial recipe, it's granulated maple sugar )
      - 1/3 cup meyer lemon juice (or lemon, or lime )
      - grated zest of 1 lemon ( use organic lemon )
      - 1/2 cup or 1 stick  butter
      - pinch of salt


Dans une casserole versez un fond d'eau.
Portez à ébullition.

Dans un bol mélangez les jaunes d'oeuf et le sucre. Ajoutez le jus et le zeste de citron et le sel.

Placez ce bol sur le bain marie et fouettez jusqu'à ce que le mélange épaississe. Quand vous passez le doigt sur une cuillère en bois la trace doit rester.
Si vous avez un thermomètre cela doit atteindre 80°c environ.

Sortez le bol du bain marie et laissez refroidir ( environ 60°C).
Vous pouvez filtrer le mélange si vous le souhaitez.
Ajoutez alors le beurre petit à petit, en le mélangeant avec un mixeur plongeant ( ou un fouet électrique).

Placez au réfrigérateur.
Il se conserve une semaine au frigo ou 3 mois au freezer.


Pour 2 inches of water in a saucepan and bring to a simmer.

Whisk together egg yolks and sugar in a  bowl. 
Once combine, whisk in the lemon juice and the zest and the pinch of salt.

Place the bowl over the simmering water and whisk the mixture until it's thick and coats back of a spoon. If you have a candy thermometer, the temperature should reach 175°F.

Remove the bowl from the heat.
You can stain the mixture if you want and let it cool to 145°F.
Add the butter a cube at a time, and blend it until smooth using an immersive blender.

Place the curd in the fridge.

You can keep it one week in the fridge, or 3 months in the freezer.




Vous pouvez l'utiliser dans une tarte, un cupcake, un gateau, ou juste sur une tranche de pain grillée !!

You can use it in a pie, as the filling for cupcakes, in a cake, or just like that, on a toasted slice of good bread !!!

MOELLEUX CITRON-ORANGE LE GOUTER ULTRA RAPIDE / LEMON ORANGE CAKE FOR A QUICK TEATIME SNACK ( ENGLISH VERSION INSIDE)





Hello les amis !

Aujourd'hui un peu de douceur...avec une pointe d'acidité !
Vous avez des amis pour le gouter, pour un diner, et vous n'avez pas plus de 30 minutes à accorder à votre dessert ?
Cette recette est pour vous !!!

J'ai 4 enfants, et quand l'heure du gouter approche, surtout le week-end, je dois être réactive !

Un dimanche de février, avec un temps pas top, j'étais d'humeur paresseuse...alors quand ma fille est arrivée en demandant " Qu'est ce qu'on a pour le gouter ?" je me suis dit " quoi ? Il faut vraiment que je fasse quelque chose ?"
Ce que j'ai fait....Ce gâteau rapide, facile et délicieux !! Le tout en 30 minutes chrono !



Ingrédients :

     - 2 citrons
     - 1 orange
     - 4 oeufs
     - 150 g de cassonade
     - 120 g de farine
     - 1 sachet de levure
     - 50 g de beurre fondu

Préchauffez le four à 180°c, th 6

Mélangez les jaunes d'oeuf avec le sucre jusqu'à obtenir un mélange qui double de volume.

Ajoutez le beurre fondu, les jus de citrons et d'orange. Mélangez bien.
Ajoutez la farine.

Mélangez jusqu'à obtenir un appareil lisse.

Montez les blancs en neige, et ajoutez les à l'appareil.

Versez cette pâte dans un moule beurré et enfournez 15 à 20 minutes.






Laissez tiédir en sortant le gâteau du four.
Dégustez encore tiède.

Alors, n'est-ce pas un jeu d'enfant ?!!!!!

Today is time for sweetness.... with a pinch of acidity !
You have some friends for the tea time, or for dinner, and you don't have more than 30 minutes to spend in your kitchen ?
This is the perfect recipe for you !!

I have 4 kids, so when it's time for the "Gouter" (...this is the french word, totally untranslatable in english for the snack that the french kids take at 4pm, when school is over.It's a real tradition for us !), even more the weekend, I need to be reactive !

One sunday of february, with a bad weather, I was in a lazy mood, so when my daughter came to me and ask me "what's for the snack Mom ?" I was like " What? Really ? Do I really need to cook something now ?"
And I did...this quick cake, delicious and easy....no more than 30 minutes !!!!





Ingredients :

    - 2 lemons
    - 1 orange
    - 4 eggs
    - 2/3 cup brown sugar
    - 1 cup all-purpose flour
    - 4 tbsp salted butter
    - 1 tsp baking powder

Preheat the oven at 350°c.

Whisk the egg yolks with the sugar until getting a double volume.

Add  the melted butter, the juices of lemons and orange. Whisk together.
Pour the flour.
Stir until getting a smoothy blend.

Beat the egg whites.
Stir them with the blend.

When it's done, pour it in a pan, and put in the oven during 15 or 20 minutes.



Let's cooling the cake a little bit.
Eat it when it's warm !

So, t's easy , isn't it  ?!!!!
